When Sable was around (R.I.P) I made it my mission to be able to replicate their cookies and i’m so glad that I did, because now they’re my most requested item. This recipe is a spin off that’ll have you giggling with joy.

Ingredients

  • 115 grams butter, softened

  • 130 grams smooth peanut butter

  • 165 grams brown sugar

  • 110 grams caster sugar

  • 2 eggs (I use 2TBS egg replacer mixed with 4TBS water)

  • 375 grams plain flour

  • 1 TBS corn flour

  • 1 teaspoon bicarb soda

  • 1/2 tsp salt flakes

  • 100 g chocolate, chopped

  • 12 Oreos, chopped

Directions

  • Preheat oven to 200°/180° fan-forced and prepare a baking tray.
  • In a large bowl, beat together with an electric mixer the butter, peanut butter, brown sugar, and caster sugar for 2 minutes or until light & fluffy. Scrape the edges of the bowl, then beat in the eggs or egg replacer. Add in the flour, cornflour, & bi-carb soda and mix on the lowest setting until the flour is just combined. Use a spatula to mix ensure the flour is properly mixed, then fold in the chocolate chunks and Oreos
  • Roll the dough into 12-20 balls and place on the baking tray. Top with salt flakes, DON’T press them, and bake for 10-15 minutes or until golden brown. Allow to rest for 5-10 minutes and enjoy!
