Peanut Butter Oreo Cookies

Ingredients
115 grams butter, softened
130 grams smooth peanut butter
165 grams brown sugar
110 grams caster sugar
2 eggs (I use 2TBS egg replacer mixed with 4TBS water)
375 grams plain flour
1 TBS corn flour
1 teaspoon bicarb soda
1/2 tsp salt flakes
100 g chocolate, chopped
12 Oreos, chopped
Directions
- Preheat oven to 200°/180° fan-forced and prepare a baking tray.
- In a large bowl, beat together with an electric mixer the butter, peanut butter, brown sugar, and caster sugar for 2 minutes or until light & fluffy. Scrape the edges of the bowl, then beat in the eggs or egg replacer. Add in the flour, cornflour, & bi-carb soda and mix on the lowest setting until the flour is just combined. Use a spatula to mix ensure the flour is properly mixed, then fold in the chocolate chunks and Oreos
- Roll the dough into 12-20 balls and place on the baking tray. Top with salt flakes, DON’T press them, and bake for 10-15 minutes or until golden brown. Allow to rest for 5-10 minutes and enjoy!
