I was always 50/50 when it came to tofu scramble, I’m a lover, but a lot of the ones you see are dry as hell.
I then discovered the @smithanddaughters scramble and fell in love, but wanted a solution that wasn’t as process driven and calorie dense, so I created my own!
This has that silkiness you crave, the flavour hit you want, and is so simple .
The ANZAC biscuits (I just use the Woolworths or Coles bakery ones) make this a simple base to put together. As long as you just keep cooking the caramel (don’t be tempted to stop too early), this recipe is surprisingly easy.
