Ingredients

  • 450 grams 450 Firm tofu, shredded

  • 4 TBS 4 Curry paste (Any will do, I recommend one with Indian flavours)

  • 2 TBS 2 Coconut Yoghurt

  • Salt

  • Pepper

  • Oil

  • Water

  • Tahini Sauce
  • tahini

  • Minced garlic

  • Lemon juice

  • Salt

  • Pepper

  • Water

Directions

  • Heat a deep frying pan on medium heat with some oil. Place the shredded tofu in the pan and cook until starting to turn golden.
  • In the meantime combine the curry paste and coconut yoghurt. Add water and combine until the paste is a thick but runny consistency. Pour over the cooked tofu and let cook for a few more minutes.
  • Assemble your sandwich! Use whatever you’ve available in your fridge/pantry, this is a flexible dish!
  • I’ve also put on a tahini sauce I made using tahini, garlic, lemon juice, S&P, and water, just combine until you get the desired consistency/taste.
