This stir fry is versatile, either use the ingredients I’ve got, or use whatever you’ve got handy. It works if things are frozen, tinned, and it’s ready within 10 minutes. As long as you’ve got the marinade, you’re set for an easy and tasty meal.

Ingredients

  • 600 g 600 Vegan Prawns

  • 1 TBS 1 Peanut Oil

  • 2 2 Leeks, sliced

  • 1 1 Red Capsicum, sliced

  • 1 1 Carrot, cut into matchsticks

  • 1 1 bunch Broccolini, sliced

  • 1/2 TBS 1/2 Sesame Seeds

  • *Marinade*

  • 1/4 Cup 1/4 Soy Sauce

  • 1 TBS 1 Rice Wine Vinegar

  • 2 tsp 2 Sesame Oil

  • 2 tsp 2 Minced Ginger

  • 1 tsp 1 Minced Garlic

  • 1 tsp 1 Maple Syrup

Directions

  • Combine all the marinade ingredients in a bowl, then add the prawns, toss to coat, and set aside.
  • Heat the peanut oil in wok over medium-high heat, then add vegetables and toss often until softened.
  • Add the prawns & marinade to the wok & cook until golden. Serve topped with sesame seeds with rice or noodles.
