Ingredients

  • 1/2 1/2 pineapple, sliced into rounds

  • 2 TBS 2 brown sugar

  • 2 1/2 cups 2 1/2 pineapple juice, chilled

  • 2 1/4 cups 2 1/4 coconut water, chilled

  • 1/2 cup 1/2 passionfruit pulp

  • 1/2 bunch 1/2 mint sprigs

  • 2 2 kaffir lime leaves

  • cups crushed ice

Directions

  • Heat a frying pan over high heat. Sprinkle pineapple with brown sugar. Cook, in batches, for 2 mins each side or until caramelised. Transfer to a jug.
  • Add the pineapple juice, coconut water, passionfruit, mint, kaffir lime leaves and ice. Stir to combine and enjoy!
