Now I absolutely love banana bread and it’s always a hit in our house, so when I decided to make mini individual loaves to take to work, I thought it was genius! Little did I know I’d make two more batches instantly as we simply loved them that much, we knew we’d need more.
Mini Banana Breads

Ingredients
2 cup 2 Self-Raising Flour
2/3 cup 2/3 Brown Sugar
1/3 cup 1/3 Chocolate Chips, plus extra to top
3 Medium 3 Ripe Bananas, mashed
1/2 cup 1/2 Oil
1 tsp 1 Vanilla Essence
2/3 cup 2/3 Milk of Choice
1 tsp 1 Bicarb Soda
1 TBS 1 Apple Cider Vinegar
Directions
- Preheat oven to 180 and prepare your mini loaf tin (use a muffin tin if you don’t have one). Place flour, sugar, and chocolate chips in a bowl and stir until well combined.
- Place milk in a jug. then bicarb soda, then vinegar. Lightly whisk with a fork until frothy. Make a well in the flour mixture bowl, then add the banana, oil, vanilla and milk mixture. Stir until mixture is just combined.
- Divide mixture evenly between the loaf tin, then top with extra choc chips. Bake for 18-20 minutes or until golden. Stand in pan for 5 minutes, then transfer to a wire rack to cool.
- Enjoy! These also freeze well for meal prep, just defrost for 5-10 minutes before eating.
