Irish Potato Bread (Farls)

If you’ve got leftover mashed potatoes this is a great recipe to use them up. Don’t think of your traditional bread, these are more of a savoury pancake and are a popular breakfast item in Ireland. My father-in-law recommends dry-frying these with a bit of flour to make them truly authentic.

Ingredients

  • 4 large 4 potatoes

  • 1/2 cup 1/2 flour, plus extra to dust

  • 2 TBS 2 butter or alternative

  • 1 tsp 1 salt

Directions

  • Peel, cube, and boil the potatoes in salted water until tender, then drain. Transfer to a bowl and mash until smooth (the smoother the better). Add the butter and the salt (to taste), then sift the flour into the bowl. Stir the dough, this should come together quickly. Feel free to add more flour if it feels too sticky
  • Turn the dough onto a floured surface and fold over until smooth, then divide into 4 balls. Roll each ball out individually until about 1 cm thick, then cut the disk into quarters.
  • Heat a frying pan to medium-high heat and DO NOT oil the pan. Dust some flour onto the pan then cook the potato bread until golden brown, flipping to cook each side. Enjoy by themselves or with a big breakfast!
