Copycat Mashies

Remember when KFC released mashed potato balls called mashies? I do and simply because my mum was obsessed.

Having worked at KFC for five years I got to know their flavour profiles and processes pretty well so I decided I’d try and replicate mum’s favourite dish. Using a cheats spice blend and the same method they use to bread the chicken, these are nostalgia in a bite.

Ingredients

  • 4 4 potatoes

  • oil (for frying)

  • 1 cup 1 flour

  • 1 TBS 1 brown sugar

  • 1 tsp 1 salt

  • 1 tsp 1 dried mixed herbs

  • 1 tsp 1 onion powder

  • 1/2 tsp 1/2 garlic powder

  • 1/2 tsp 1/2 smoked paprika

  • 1 tsp 1 MSG (optional)

Directions

  • Peel, cube, and boil the potatoes in salted water until tender, then drain. Mash the potatoes until smooth then set aside until cool enough to handle.
  • In the meantime, place the flour, sugar, and herbs and spices into a bowl and stir. Add water to another bowl, this will be used to bread the potato balls.
  • Once the potatoes have cooled, roll them into balls, then start the coating process. Coat the balls in the flour mixture, dunk into the water, then back into the flour. Repeat this process again so the balls are double-coated.
  • Heat the oil in a saucepan (or deep fryer) on high heat. Once the oil is hot, fry the mashies until golden, turning if necessary. I recommend eating these hot from the pan with a bowl of gravy to dip into and enjoy.
