Ingredients
1 pack 1 lemon & raspberry tarts
1 tin 1 chickpeas (you’ll be using the aquafaba, aka chickpea juice)
1 pinch 1 cream of tartar
3/4-1 cup 3/4-1 caster sugar
Directions
- Simply seperate the chickpeas and liquid, retaining the liquid as that’s what we’ll use (it’s called aquafaba and it’ll be your new best friend). Whip the aquafaba (chickpea juice) in a stand mixer or with beaters until stiff peaks form. Whilst whipping, add in the cream of tartar, then gradually feed in the caster sugar until the mixture is glossy and stiff peaks form.
- Simply slap on or pipe the meringue onto your tarts, then use a blow torch (if available) to toast the meringue. Alternatively place the tarts under a grill for a few minutes until the meringue turns golden. Enjoy!
