Growing up mum used to make this cheats chocolate mousse and I always thought that’s how it was made, we didn’t know any difference and we loved it. Use this for a cheats dessert alongside any red fruit, and I’m sure they won’t know either.

Cheats Chocolate Mousse

Ingredients
250 g strawberries, cherries, or fruit of choice, diced
1 TBS caster sugar
100 g dark chocolate, chopped
500 ml thickened cream
1 tsp vanilla essence
1/4 cup icing sugar
Directions
- Place fruit, sugar, and 2 tbs water in a small saucepan, then bring to the boil over medium-high heat. Cook for 6 minutes or until the fruit starts to break down and liquid has thickened. Set aside to cool.
- Place chocolate in a microwave-safe bowl. Heat in 15-30 second bursts, stirring after each burst, until the chocolate is almost melted. Stir again after microwaving until the chocolate melts completely.
- Whip the cream, vanilla essence, and half the icing sugar together in a bowl until stiff peaks form. Reserve one-quarter of the cream, then gently fold half of the remaining cream into chocolate mixture. Gently fold in remaining cream until just combined, taking care not to overwork the mixture.
- Divide chocolate mousse among glasses, then top with the remaining cream and jam. Enjoy!
