Growing up mum used to make this cheats chocolate mousse and I always thought that’s how it was made, we didn’t know any difference and we loved it. Use this for a cheats dessert alongside any red fruit, and I’m sure they won’t know either.

Ingredients

  • 250 g 250 strawberries, cherries, or fruit of choice, diced

  • 1 TBS 1 caster sugar

  • 100 g 100 dark chocolate, chopped

  • 500 ml 500 thickened cream

  • 1 tsp 1 vanilla essence

  • 1/4 cup 1/4 icing sugar

Directions

  • Place fruit, sugar, and 2 tbs water in a small saucepan, then bring to the boil over medium-high heat. Cook for 6 minutes or until the fruit starts to break down and liquid has thickened. Set aside to cool.
  • Place chocolate in a microwave-safe bowl. Heat in 15-30 second bursts, stirring after each burst, until the chocolate is almost melted. Stir again after microwaving until the chocolate melts completely.
  • Whip the cream, vanilla essence, and half the icing sugar together in a bowl until stiff peaks form. Reserve one-quarter of the cream, then gently fold half of the remaining cream into chocolate mixture. Gently fold in remaining cream until just combined, taking care not to overwork the mixture.
  • Divide chocolate mousse among glasses, then top with the remaining cream and jam. Enjoy!
