Brownie Cookies, Brookies, which ever way you prefer to call these, I’m calling them heaven.

I personally think these can sometimes be better than a traditional brownie as you’re guaranteed a crispy edge and fudgy centre with each cookie. Top with sea salt flakes to take these to the ultimate indulgence level.

Guaranteed a crispy edge and fudgy centre, these brownie cookies or brookies are heaven in a bite.

Ingredients

  • 200 grams 200 Dark Chocolate

  • 50 grams 50 Nuttelex Buttery

  • 100 ml 100 Aquafaba

  • 1 tsp 1 Vanilla Essence

  • 180 grams 180 Icing Sugar

  • 120 grams 120 Flour

  • 20 grams 20 Cocoa Powder

  • 1/2 tsp 1/2 Baking Powder

  • 1 pinch 1 Salt

Directions

  • Melt the margarine and chocolate in a large bowl in the microwave or over a water bath on the stovetop. Once melted, carefully blend in the aquafaba and vanilla extract using a manual or electric hand mixer.
  • Sift together the icing sugar, flour, cocoa powder, baking powder and salt in a medium bowl. Fold the dry ingredients into the melted chocolate mixture.
  • As the dough will be too soft to hold its shape, place the dough in the fridge to rest for 20 minutes. In the meantime preheat the oven to 180°C fan-forced.
  • Roll the dough into balls and place on a lined baking tray. Bake for 10 minutes, then apply salt flakes directly on top once removed from oven (before cooled). Leave to cool on the tray for 1-10 minutes or once hardened before serving.
