Brownie Cookies, Brookies, which ever way you prefer to call these, I’m calling them heaven.
I personally think these can sometimes be better than a traditional brownie as you’re guaranteed a crispy edge and fudgy centre with each cookie. Top with sea salt flakes to take these to the ultimate indulgence level.

Ingredients
200 grams Dark Chocolate
50 grams Nuttelex Buttery
100 ml Aquafaba
1 tsp Vanilla Essence
180 grams Icing Sugar
120 grams Flour
20 grams Cocoa Powder
1/2 tsp Baking Powder
1 pinch Salt
Directions
- Melt the margarine and chocolate in a large bowl in the microwave or over a water bath on the stovetop. Once melted, carefully blend in the aquafaba and vanilla extract using a manual or electric hand mixer.
- Sift together the icing sugar, flour, cocoa powder, baking powder and salt in a medium bowl. Fold the dry ingredients into the melted chocolate mixture.
- As the dough will be too soft to hold its shape, place the dough in the fridge to rest for 20 minutes. In the meantime preheat the oven to 180°C fan-forced.
- Roll the dough into balls and place on a lined baking tray. Bake for 10 minutes, then apply salt flakes directly on top once removed from oven (before cooled). Leave to cool on the tray for 1-10 minutes or once hardened before serving.
