Ingredients
1/4 1/4 watermelon, cubed
2 2 cucumbers, thinly sliced
1/2 1/2 red onion, thinly sliced
150 grams 150 feta, drained (or 1 avocado, diced)
120 grams 120 rocket leaves
80 grams 80 black olives
1/2 bunch 1/2 mint leaves
2 tbs 2 extra-virgin olive oil
1 1 lemon, zested & juiced
Directions
- Arrange the watermelon, cucumber, onion, feta (or avocado), rocket, olives and mint leaves on a serving platter.
- Place the oil and lemon juice in a bowl and stir, or in a jar with the lid on tightly and shake until combined. Drizzle over the salad.
- Sprinkle with the lemon zest and enjoy!
