Ingredients
1/2 1/2 pineapple, sliced into rounds
2 TBS 2 brown sugar
2 1/2 cups 2 1/2 pineapple juice, chilled
2 1/4 cups 2 1/4 coconut water, chilled
1/2 cup 1/2 passionfruit pulp
1/2 bunch 1/2 mint sprigs
2 2 kaffir lime leaves
cups crushed ice
Directions
- Heat a frying pan over high heat. Sprinkle pineapple with brown sugar. Cook, in batches, for 2 mins each side or until caramelised. Transfer to a jug.
- Add the pineapple juice, coconut water, passionfruit, mint, kaffir lime leaves and ice. Stir to combine and enjoy!
