Sometimes I want a salad bowl, but let’s be realistic most of the time I want something like a load of fries. This bowl is that perfect balance of carbs and freshness, made easily after work and perfect for a Friday night at home.

Ingredients

  • 1 pack 1 Pre-cooked Fries/Chips

  • 1 1 Avocado, diced or smashed

  • 2 2 Tomatoes, diced

  • 1 1 tin Corn Kernels

  • 1 1 tin Kidney or Black Beans, rinsed

  • .5 .5 Red Onion, diced

  • 2 2 Spring Onions, sliced

  • 1 1 -2 Jalapenos, sliced (can be pickled)

  • 1 1 lime, sliced

  • 1 tsp 1 Garlic Salt (optional)

  • Cheese Sauce
  • 1 1 Tin Coconut Milk

  • 6 TBS 6 Nutritional Yeast

  • 2 TBS 2 Tapioca Flour

  • 1 tsp 1 Salt

  • 1 tsp 1 Smoked Paprika

  • 1 tsp 1 Onion Powder

  • .5 tsp .5 Garlic Powder

Directions

  • Cook the fries according to packet instructions
  • In the meantime place the avocado (if diced), tomatoes, corn, beans, juice of 1/2 a lime and garlic salt (if using) in a bowl and stir to combine
  • To make the cheese sauce whisk all the ingredients in a saucepan over a medium heat, stirring often until the sauce has turned into the desired consistency
  • To assemble, place the fries onto a serving tray or in a bowl and top with cheese sauce, fresh salsa, & the other ingredients. Squeeze more lime to taste and enjoy!
