Cheesy Tofu Scramble Bagel

I was always 50/50 when it came to tofu scramble, I’m a lover, but a lot of the ones you see are dry as hell. I then discovered the @smithanddaughters scramble and fell in love, but wanted a solution that wasn’t as process driven and calorie dense, so I created my own!

This has that silkiness you crave, the flavour hit you want, and is so simple.

Ingredients

  • Tofu Scramble
  • 450 grams 450 Block Firm Tofu, pressed

  • 1 tsp 1 Oil

  • 3 TBS 3 Nutritional Yeast

  • 1 tsp 1 Smoked Paprika

  • 1 tsp 1 Turmeric

  • 1 tsp 1 Ground Cumin

  • 2 tsp 2 Dijon Mustard

  • 50 grams 50 Vegan Cheese, shredded

  • 1/2 tsp 1/2 Black Salt

  • S&P

  • Serve with
  • Toasted Bagel

  • Tomato Relish

  • Spinach (sautéed in garlic butter)

  • Everything Bagel Seasoning (optional)

Directions

  • Heat oil in a large frying pan over medium heat. Crumble in the tofu to your desired size, add in nutritional yeast and spices and start cooking until it browns.
  • When tofu is almost done (browned to your liking), add in the mustard and vegan cheese and melt through until saucy. Add the black salt and season to taste just before taking off the heat .
  • Serve up your bagel and enjoy a simple, delicious, and easy meal.
