Seriously simple yet packed full of flavour, you need to make this.
First of all I need to just point out how far vegan products have come since I’ve been vegan. When I first went vegan there was minimal alternatives available, and the vegan cheese was questionable at best. Now we are spoilt for choice, and it makes me seriously excited every time I try vegan products.
First of all with this toastie chicken (or vegan chicken in my case) is optional, but it does help make it more filling. The cheese and kimchi are absolute MUSTS, and the best cheese by far I’ve used on this is camembert. You can also use any other cheeses available, but opt for something that has a bit of structure to it and wont fall apart (like a feta).
