These are super easy to make and can be stuffed with whatever you please! They make a great party snack, lunch, or even something extra for the lunchbox.
Pizza Stuffed Mushrooms

Ingredients
12 12 Portobello Mushrooms, stems removed and insides scooped out
1/2 jar 1/2 Pizza Sauce
12 12 Olives, sliced
1/2 1/2 Capsicum, diced finely
Vegan Salami (optional)
100 grams 100 Vegan Cheese
Directions
- Preheat the oven to 200° and prepare a baking tray. Bake the mushrooms top-side up for 2 minutes to soften. Remove from oven.
- Layer the mushrooms with the pizza toppings, starting with the sauce and ending with the cheese. They won’t need many toppings, you can get creative as you want!
- Bake the mushrooms for 8 minutes or until the cheese has melted. Enjoy!
